]]>For many of our residents, this holiday season will be one of firsts — first in a new apartment, first with a significant other, first as a new parent, first in a new city or state, and the list goes on.
And, perhaps you’re looking to develop some new holiday traditions of your own.
Here are six of our team members’ favorite holiday traditions and memories to help inspire new ideas for creating your own.
1. Watching the Grinch
Abbie, of The Preserve at Normandale Lake in Bloomington, MN, loves pouring a glass of wine, putting on the movie “How the Grinch Stole Christmas” and putting up her tree. Her grandma gives her a new ornament each year, so she lays them all out and reminisces about the memories made with each one. Then she gets to decorating!
“This solo tradition always gets me in the holiday spirit. It’s not much, but it’s something I look forward to!”

Here are five fun facts about the history of the Grinch.
2. Making a gift exchange a game
Shelly, of CIP’s home office, said her large family turns their adult gift exchange into an exciting game. After someone picks a prize, they have five minutes to roll five dice. If they roll a seven or eleven, they can switch gifts with someone else.
“When the five minutes is up, you keep the gift you have. It’s so much fun!”
The kids also get to play games for prizes, as well as receive a surprise visit from Santa. He delights them by calling out their names, and then they sit on his lap and receive their present.
“The kids’ expressions are priceless.”

3. Making hot wassail and looking at lights
Stafanie, of Ridge Pointe Villas at Pine Lake Heights in Lincoln, NE, serves up hot wassail while they decorate their Christmas tree. Then, they make some hot chocolate and drive around looking at Christmas lights.
“I love the time with the family and kids and how excited they get about it every year,” Stefanie said.

4. Going to the ballet
Kylie, of The Villas at Mahoney Park in Lincoln, NE, grew up performing in The Nutcracker. Now, she and her family have continued the tradition and attended the ballet each year as audience members.
“One of my favorite parts of The Nutcracker is now being able to sit in the audience and not only support local dancers, but also see and hear how excited younger dancers are about hopefully being in the show in the future!”

5. Opening gifts on Christmas Eve
Jenny, of CIP’s home office, loved kicking off Christmas with some homemade Runzas and some gifting excitement on Christmas Eve.
“When my kids were little, we used to have them open their gifts from us on Christmas Eve, which consisted of a board game, movie and PJs. They would sleep in their new PJs and wake up to Santa gifts on Christmas morning.”

6. Collecting ornaments while traveling
Nancy, of CIP’s home office, said her family collects ornaments from their travels throughout the year and marks the date on them.
“We have ornaments from across the globe, and it makes for an easy item to transport while traveling and reminds us of our great memories while we’re decorating the tree.”

7. Visiting Santa
Dawn, of CIP’s home office, loved her hometown’s tradition of airing a 30-minute segment called “Santa’s Workshop” from Thanksgiving through Christmas. On the show, Santa would read letters, count down to Christmas, and do silly antics with his sidekick.
“If you were extra good/lucky, you would go to David’s Department Store and stand in line to see him in person and tell him what you want for Christmas.”

So, we’ve collected some of our team members’ favorite weeknight entrees to help make your life a little easier.Take the thinking out of dinner, and try one of these staff-recommended recipes below.
(And, we threw in a dessert for good measure, because sweets always help, right?!)
1. Slow Cooker Chicken Chile Verde
This dish defines the phrase “easy peasy.” If you have 5 minutes, then you have time to make this chile verde dish. It can even be adapted for an Instant Pot.
You can make it as mild or spicy as you prefer, but no matter what spice level you prefer, you will fall in love with this recipe from The Real Food Dietitians.

2. Loaded Enchilada Pizza Pie
This dairy-free recipe is delicious and can easily be adapted in so many ways!
If you’re short on time, several of the ingredients can be store purchased instead of homemade. You also can swap out dairy-free cheese for any other cheese, if you prefer.

3. Crock-Pot Butter Chicken
Want to spice up your crock pot recipes? Then check out this Crock-Pot Butter Chicken dish from Delish.
Throw all the ingredients in your crock pot, and come home to a fragrant home — and amazing meal.
TIPS: It calls for garam masala, which can be harder to find in your standard grocery store. Melissa recommends you can swap that out for pumpkin pie spice and still get a great-tasting dish. You can also use any type of instant rice.

4. Slow Cooker Pepperoni Pizza Bake
It requires just five ingredients and no chopping or cutting. It’s the definition of easy yet delicious.

5. Chicken Satay
This chicken satay is straight from the pages of an old favorite cookbook. It only requires four ingredients, making it an excellent choice for an easy, weeknight dinner.
“I like this recipe because it is a quick, easy dinner with little cook time. You can customize the rice to suit, so it ends up being a pretty healthy dish for a lazy Monday night.” — Jill, Pine Lake Heights Apartments
INGREDIENTS:
- 2-4 Boneless, skinless chicken breasts, cut into pieces or slices
- 1 C. Peanut butter (creamy or crunchy will work)
- ½ C. soy sauce (or more to taste)
- Rice (to serve with chicken)
Mix soy sauce with peanut butter until blended.
Put chicken in the mixture and stir until coated. If possible, let marinate for an hour or two.
When ready, line a cookie sheet with foil and spray with Pam. Lay chicken pieces out in a single layer and broil, turning a couple times, until crispy and done.
Serve over your choice of rice.
6. Pineapple Barbecue Chicken
Pineapple with barbecue? It may sound strange, but it sure tastes amazing!
This recipe from the Diethood also calls for just four ingredients, making grocery shopping that much easier. It’s also low calorie. Talk about a win-win!

7. Instant Pot Mexican Chicken Stuffed Sweet Potatoes
This dish from 40 aprons is full of flavor and takes just 10 minutes to prepare.
These sweet potatoes are stuffed with tender chicken and topped with a quick avocado-jalapeno sauce. It’s also Whole30 approved.
“I LOVE this recipe, and while it says it’s for the Instant Pot, you can certainly make it in your oven or put the chicken in the slow cooker to be done when you get home. One thing I really like about this recipe is that it has you make a delicious avocado jalapeƱo sauce, and I am a sucker for sauces! 8. Chicken Cheddar Fajitas
This dish from HelloFresh takes a little longer to prepare at 40 minutes, but the results are so worth it. And, really, can you ever go wrong with fajitas?

9. Tater Tot Casserole
This dish is comfort food at its best.
It’s also quick and easy using only a handful of ingredients. There are a lot of tater tot casserole recipes out there, but this version with green beans is the best (in our humble opinion).

10. Warm Apple Pie and Ice Cream Treat
And last, but not least, a tasty dessert to top off our list. This warm apple pie and ice cream treat is simple to make and is the perfect way to end a long, busy day.
INGREDIENTS :
- 1 apple, fuji or similar
- 2 oz. milk to almond milk
- Dash cinnamon
- Dash nutmeg
- 1 tablespoon brown sugar
- Vanilla ice cream
Slice the apple in 1-inch pieces.
Toss with the milk in a pan on the stove on medium to medium-high heat for 3 minutes, stirring constantly or until the apple is softened.
Add cinnamon and nutmeg to taste. Add brown sugar, and turn heat to medium-high to high and allow brown sugar to caramelize, stirring constantly.
Pour over vanilla ice cream, and enjoy!
Pro tip: Add a little granola on top for some extra crunch.

How to Make a Green Smoothie
- Start by adding 4-5 strawberries and a cup of yogurt into a blender.
- Quick blend to make room for the other ingredients.
- Next, add a handful of spinach and quick blend until the spinach is mixed.
- Add a spoonful of peanut butter and half of a banana.
- Blend for a few more seconds and you're done.
- OPTIONAL: Add ice and blend until mixed.

Recipe for Aztec Salsa
Ingredients:
- 1 (15 oz.) can of black beans
- 1 (15 oz.) can of mexicorn(kernel corn with red and green bell peppers)
- 2-3 Avocados (depending on their size)
- 2-3 Tomatoes (depending on their size)
- 1 Onion
- 1 Packet of Zesty Italian salad dressing
- A drizzle of olive oil
Instructions:
- Prep the vegetables by chopping the tomatoes, onion, and avocado into bite-sized pieces.
- In a large bowl, combine the chopped tomatoes, onion, and avocado with the black beans and mexicorn.

TACO SOUP RECIPE:
- 1 lb. ground beef
- 1 C. onion
- 1 jalapeno
- 2 14.5-oz cans of diced tomatoes
- 1 15 oz. can of corn
- 1 15-oz. can of black beans
- 1 packet Ranch seasoning mix
- 1 packet Taco Seasoning mix
Brown ground beef over medium-high heat until done.
Then add onion and jalapeno and cook until tender.
Then add all remaining ingredients and stir until combined. Put lid on, and simmer on medium heat for 20-25 minutes.
(Optional) Then top with shredded cheese, cilantro, avocado or even your favorite chips. Then enjoy!
